Glossary ]
Maceration
: This is the process whereby red wine
grapes are put in vat and fermented before being
pressed. Maceration can last from 3-8 weeks, depending
on the winegrower's preference. This choice will
have a major influence on the wine's future as well
as the degree to which it is smooth or tannic.
Ageing
: This is the name given to the process
taking place between the end of fermentation and
bottling. Wines are aged in either oak barrel or
vat. The length of time varies according to the
wine: several weeks for nouveau wines such as Beaujolais
to several months for the great wines of Burgundy.
The shipper's essential role is to age wine. |
